Well the Dino's are suppose to be some what passive (it's in the food and water that they consume) but once in a while a rouge does occur. This design allows the rider to shot much more freely then they would be with a roof. Most the time they need to shoot up and a roof would block their line of sight.

Gizem still has a recipe for grilled dinos.
