the second Adjustable-90-Degreeis good ...it's aluminium better for a lifesize doll . the first is stainless steel too heavy

They have just about any joint you can imagine here (McMaster-Carr)...

They can have a female end so you could couple them together for a wider range of movement...

You could epoxy these into the end of PVC pipe or use threaded rods for bones.

They even have 3D CAD files you can download...
