Of course we'd all love a robotic head. Better yet a full robotic skeleton that knows how to cook. It's all about the priceand what you get for it. If it $500 you'd get a lot of buyers. If it's $5000 you wont get as many, unless it's really good.
Do just the head for starts. To keep prices down, you will have to figure out a way to mass produce it. True, it will have to be assembled by hand, but you will have to figure that out. You made the first one, s now you have to reproduce it. The people you hire to assemble it won't have to be super skilled or require an engineering degree. Figure you pay the workers $20 / hr. See what's the cheapest you can make it, but make decent profit.
A lot of kinks need ironing out by the look of it, but I'm happy we've progressed this far technologically. I can't wait for us to surpass the uncanny valley.
